Anyone knowledgeable about what is in involved in putting twin 2 " SU carbs onto a series 3 (injected head) Like the series 3 engine better, but I am hesitant to run injection since I want to put the engine into a series 2 car.

I've not converted one but I've worked on series IIs and IIIs. I would think the intake manifold would be the main thing to change and it should bolt up with little fuss.
